September opens the Zeeland oyster season, and on the historic oyster pits of Yerseke three tasting rooms that farm their own oysters sit next to each other on the same dyke road, Havendijk: the Oesterij, Oesterproeverij Pekaar and Oesters & Bubbels, each with windows over the pits where the oysters are kept. They serve two local oysters, the round, creamy Zeeuwse platte and the deep-cupped, briny Zeeuwse creuse, at roughly 3 to 4 euro each at the table. For anyone in the Netherlands planning a drive to Zeeland for oysters, the useful comparison is not which room is best but three practical things: the price per oyster, the day each one closes and whether you can book, and the big gap between eating an oyster there and taking the same oyster home, so work out how many you want before you go.
- Why here: Pekaar's menu explains that the pits were first built in 1870 and flat oysters were once grown on roof tiles; the severe winter of 1962-63 killed almost the entire stock, after which creuses were brought in from Japan and Portugal and have since become Zeeland oysters. A platte needs about five years before it can be eaten and a creuse is fished at about four, then rested in the pits to shed sand. Two people each eating three of each, so six creuses and six plattes, pay 16.50 + 19.00 = 35.50 euro using the six-piece prices at Oesters & Bubbels and 6 × 3.10 + 6 × 4.10 = 43.20 euro at Pekaar, a 7.70 gap that comes mostly from the platte. One person eating twelve creuses pays 32.00 for the dozen at Oesters & Bubbels against 12 × 3.00 = 36.00 one by one, while the same twelve to take away cost 12 × 0.90 = 10.80, so the extra 21.20 buys the opening, the plate and the view over the pits.
