Sligro 24/09-12/10

The autumn menu has changed but the wine page is still on summer, and the by-the-glass list needs rebuilding. The book in hand is number 13 in the Sligro wine series, 61 pages, valid from 24 September to 12 October 2026, and a wholly different publication from the nine-page flyer running in the same days: wine on every page, with direct import, an exclusive range and top-tier houses stated on the cover.

Keep one thing in mind while turning pages: the book is arranged by taste and region rather than by cost per glass, and that step is left to you. What it gives is a price per bottle and a bottle size. The three Gérard Bertrand wines on the cover read La Grande Bleue, article 213683, 75 cl from 7,99 to 5,99; Cote des Roses rosé, article 232066, from 9,09 to 7,49; and Esprit de Cote des Roses, article 232067, from 11,99 to 8,99. A 75 cl bottle poured at 12,5 cl yields six glasses, so the 5,99 bottle costs exactly 1,00 a glass. That figure is nowhere in the book, and it is the one you are really comparing when you build a list.

Across sixty-one pages three threads each fill one slot on a by-the-glass list:

• The by-the-glass tier, under six euro. The three Gérard Bertrand wines from IGP Pays d’Oc, Extra Blanc (541161), Gris Blanc Rosé (156157) and Rouge Clair (201887), all run 75 cl from 7,99 to 5,99, and Pierre Amadieu Viognier-Clairette from the Rhône (204403) goes from 6,99 to 5,99. One white, one rosé and one red, each at 1,00 a glass, and the base of a list is covered.
• The food-pairing tier, between nine and eleven euro. Pierre Amadieu Vinsobres Les Piallats (066307) falls from 10,99 to 8,99 and Vacqueyras La Grangeliere (078333) from 12,99 to 10,99. Pour cost here lands between 1,50 and 1,83 a glass, which is the band for dishes that need a wine able to stand beside a main course without moving up to Burgundy money.
• The top of the list, above twelve euro. Laroche La Jouchère offers two from Burgundy: Petit Chablis (168679) from 15,99 to 12,50 and Chablis (937803) from 18,39 to 14,50. From Tokaj in Hungary, the Patricius sweet wines start at Tokaji Furmint Selection (205686) at 8,50 and reach Tokaji 5 Puttonyos Aszú (206687) at 21,99 for 50 cl. Dessert wine poured at 7,5 cl gives a little over six glasses from a 50 cl bottle.

The sum is the bottle price divided by six, which is the pour cost of one 12,5 cl glass. Apply it to your own list: a 75 cl bottle poured at 12,5 cl gives six glasses and at 15 cl gives five, so fix your pour first and then divide the bottle price. At six glasses the 5,99 bottle is 1,00 a glass, which against a 5,50 menu price is a pour cost of 18 per cent. The 12,50 bottle is 2,08 a glass, and at the same 5,50 that becomes 38 per cent, needing roughly 8,50 on the menu to return to a similar ratio. Running the list through that division before ordering a case settles which wines earn their place faster than sorting by taste does. The book also carries Italia wine in cans, four by 25 cl at 7,99, and Ever Bloom sparkling tea at 0 per cent (234012), 75 cl from 7,99 to 5,99, for the drivers and non-drinkers on the same list.

Every wine carries an article number beside it, and that is the only thing that cannot be mistaken when ordering. Nothing is printed about stock at each distribution centre or a minimum order, vintages change between batches and a new vintage of the same label tastes different, so checking the article number before ordering beats checking the name.
