On Tuesday morning the owner of a twenty-seat bistro is planning next week’s menu: a starter that can be plated ahead, a beef cut that grills well and slices neatly for the main, and something seasonal from the sea for the weekend. • Schotse runderbavette prime: 20.99 per kilo (was 26.99, 22.88 incl.), in pieces of about 2 kilo. Bavette has long fibres, takes high heat well and is sliced against the grain, so one piece covers a whole evening of mains.
• Zeeuwse platte oesters: a basket of 12 for 13.99 (was 16.99, 15.25 incl.). Flat oysters from Zeeland are in season in October; served two or three per plate, one basket gives four to six weekend portions.

Work out the ingredient cost per portion from the price including VAT first, then set the menu price. Filled in: carpaccio at 30.51 incl. divided by 20 portions is about 1.53 a portion; bavette at 200 g a portion is 22.88 times 0.2, about 4.58; oysters at 15.25 divided by 12 are about 1.27 each, so about 3.81 for a plate of three. Multiply each by your number of covers and you have the ingredient cost of the three dishes for the week.
