It is six o’clock on an October weekday, a family of four has just got home, it is already dark outside, there are potatoes in the cupboard and nobody wants to spend an hour cooking. This autumn issue of Allerhande has 123 pages, with a cover of cabbage mash, sausage and apple, a badge for 16 dishes under 2,50 per person, seven borrel boards and slow-simmered one-pan comfort food.

Cold evenings call for something hot and filling, but there are five weeknights to cover, so both the cost and the time of each meal count.

The “Wat eten we?” section of this issue has three stamppot recipes, one for each of three different weeknights:

  • Witlofstamppot met visfrietjes en tuinerwten: 1,95 per person, for four, 25 minutes. One kilo of floury potatoes, four heads of chicory, 300 g of fish fingers, 450 g of frozen peas and a little mint. Fish fingers are what children will eat, and the chicory goes into the mash in strips, so one plate covers vegetables and protein on the busiest night.
  • Stamppot met Chinese kool, worst en appel: 2,05 per person, for four, 30 minutes, and the dish on the cover. Six Catalan sausages, two crisp sweet apples, a Chinese cabbage of about 600 g and 30 g of toasted hazelnuts. Salty sausage and sweet apple make it the one for a night when you want a bit more on the plate.
  • Hutspot met pittige gehaktballetjes: 1,95 per person, for four, 30 minutes. Carrots, onions, frozen pumpkin pieces and potatoes mashed together, with 200 g of beef tartare rolled into twelve meatballs with chilli flakes. The magazine suggests rolling a few without chilli when small children eat along, and the pumpkin comes frozen, so there is nothing to peel.
